1Nul8 Basement is the absolute counter point to Rotterdam's drab centre and hellish road system. The city was badly beaten with the brutalist stick of fifties arch-utilitarian architecture. Rotterdam is not a place where you would expect to discover loveliness. And yet here it is: the 1nul8 basement restaurant pops up like a Banksy flower emerging defiantly from a concrete gutter.
I'm not even sure how to pronounce its name, and I'd certainly be hard pressed to describe the route to its hidden entrance. This is by definition a gem tucked away and hidden off a side street. Drop down its steps past the discreet entrance and you land in a gorgeous interior. Soft lighting, muted sounds, an impressive open kitchen, an imposing central bar, and hublot windows onto a canal. Tables are laid on all sides with booths at the back; this feels like the interior of a glossy trend setting magazine. It just oozes effortless cool, as do the staff. No uniforms and no formality, I suddenly felt old, podgy and inadequate.
This is a place where you would look like a food hero if you took your friends and laid claim to being the first to discover it. Is there a nicer place to dine in Rotterdam? I don’t even care to find out, this is the place for me.
I happened to go with a table of work connections so we were given a set meal, much to my sadness I did not get see the full menu or the wine list. I was a guest and it seemed rude to inquire.
My mind was immediately whisked towards other things as the dishes began to arrive; all more beautifully intriguing and beguiling as the next.
There are flavours I still struggle to identify, spices and perfumes from an Orient that caused my tastebuds to party with surprise. Everything was expertly made and served exactly as it should, not an over-cooked vegetable or an underdone steak in sight. The fish was crisp on the outside and full of flaky melt-in-the-middle tenderness.
Every mouthful intrigued and satisfied equally. To date and without a doubt the best meal I have enjoyed this year. A side dish of brocoli sprouts with black olives may not sound interesting until you spend twenty minutes trying to name that other ingredient that is in there and lifts the dish to stratospheric heights and yet remains a mystery. Is there some Yotam O in there?
Every plate had something effortlessly sibylline, subtle, and satisfying about it.
Two course in and I was floating in a daydream. More dishes just kept coming. I lost count.
It is hard to define a specific culture, country, or influence behind the meal. I wish I could refer to it as fusion but the term is so tainted that it misses the point and does a disservice to 1nul8. I can only say that it was brilliantly inspired and other worldly. If 1Nul8 ever publish a cookbook; I want it. Immediately. Like I want the grimoire to life’s own secrets.
Finally, the dessert was a large board of everything indulgent served with six spoons and a starting gun. A chocolatey and decadent fondant, homemade ice cream and tiramisu. When was the last time you had a tiramisu that stopped you in your tracks because it was so good? Tiramisu is a dish so overdone that I baulk at the very idea of its 90s naffness. Not so here. Miss this dessert at your peril.
The 1Nul8 basement restored my faith in the future of food and the fact that every now and again the world will throw at you an experience so rewarding and so novel that it is going worth travelling to Rotterdam just for that meal.

During my second visit to 1nul8 Basement, the experience was notably different from my previous one two months ago. Despite making reservations nearly a month and a half in advance, we were assigned a table that appeared to be one of the least desirable in the entire restaurant. The small, round table was not ideal for the shared dining concept, a trend that seems to be increasingly common in restaurants that prioritize aesthetics over practicality. For example, we ordered four shared dishes, but not a single one would fit on the table because the placemats underneath the small plates were too large and obstructed the space. Additionally, we had to frequently replace the candle, which was the only source of light, as the restaurant was quite dark.
Moreover, the overcrowded restaurant on a Saturday evening made it challenging to get the attention of the waitstaff, and when we did, the service felt rushed and impersonal. Our table placement also contributed to the lackluster ambiance, as we were situated near the back end of the bar, where waiters frequently gathered to discuss and restock the drinks fridge, creating additional noise.
Despite these drawbacks, the highlight of the evening was the exceptional quality of the food, cocktails, and wine, similar to my previous visit. It was evident that the chefs were skilled and used high-quality ingredients. However, I would recommend this restaurant primarily for those who wish to enjoy drinks, as it might not be ideal for a shared dining experience with fewer than four people, due to the tables being designed for such group sizes.
In summary, although the food at 1nul8 Basement is excellent, the restaurant could do with a better balance between style and function. With an average cost of 100+ euros per person, customers should expect a more upscale experience.
